My Best Cornbread Recipe

Yesterday my plan for supper tonight was to have beans, cornbread and fried potatoes and onions. Plans change sometimes.

I forgot that I had a doctor's appointment today. So since leaving things to themselves on the stove is a truly bad idea, that supper has been postponed for a day or so.

I will share my best cornbread recipe with you though sans pictures. Just to warn you - it is a sweet cornbread and I know not everyone likes sugar in their cornbread. So I thought it fair to warn you in case you'd prefer to skip over this post.

Best Corn Bread

2 cups baking mix (Bisquick)
3/4 cup sugar
3/4 cup yellow cornmeal
1/2 teaspoon baking powder
2 eggs, slightly beaten
1 cup milk
3/4 cup butter or margarine, melted
1 teaspoon vanilla extract

Preheat oven to 350 degrees F.

Combine the baking mix, sugar, cornmeal and baking powder in a large bowl. Add eggs, milk, butter and vanilla. Mix well. Pour into a prepared (sprayed or greased and floured) 8"x8" baking pan. Bake at 350 degrees for 35 to 40 minutes or until golden brown.

We think it's yummy good!

Now to figure out what we're having instead. . .

  3. That sounds good..I havent tried the sw soup yet even tho I had the best intentions...
