Mexican Bean and Rice Salad - My Way
I found a recipe for Mexican Bean and Rice Salad on allrecipes.com. I want to share my version with you but you can find the original version here.
Mexican Bean and Rice Salad My Way
2 cups cooked (and cooled) brown rice*
1 (15 ounce ) can pinto beans, rinsed and drained well
1 (15 ounce) can black beans, rinsed and drained well
1 (15.25 ounce) can whole kernel corn, drained
4 to 5 green onions, chopped fine
1 green bell pepper, diced
1 large tomato, diced
A few jalapeno slices, chopped fine**
1 teaspoon minced garlic
1/2 teaspoon cumin
juice of 1 lime
1/4 to 1/2 cup Italian salad dressing
Mix altogether and chill thoroughly.
*I've given this recipe out to several folks and they always ask about the amount of rice. If it's 2 cups of rice before it has been cooked or after it has been cooked. The measurement is AFTER the rice has been cooked.
**I prefer a little heat so I used about 5 or 6 slices of pickled jalapenos from a jar. You can adjust to whatever heat you prefer your salad to have.

Another nice addition would be diced avocado but that would never fly at my house as I'm the only one who will touch avocado. And this recipe makes a LOT of salad.

This looks so good. I guess this will go on the menu this week. I love salads and it is just to hot to cook. Hubby will be gone for work and he isn't a big fan of salads so I need to get my fix while I can. Thanks for sharing.

ReplyDeleteTHIS RECIPE SOUNDS WONDERFUL BUT I WOULD HAVE TO LEAVE OUT THE GREEN PEPPER...IT JUST DOESN'T LIKE ME. BUT IT LOOKS SO YUMMY, I WILL HAVE TO TRY IT AND ESPECIALLY BROWN RICE IS BETTER FOR US...I LOVE ANYTHING WITH RICE.
ReplyDeleteI WAS THINKING ABOUT YOUR BIRDIES....THEY FLY QUICK...EVERY YEAR BUT THIS YEAR WE HAVE HAD BABIES ON THE PORCH AND ONE DAY THEY ARE THERE AND THEN THEY ARE GONE. MR. SIMPLY AND I MADE IT TO THE PORCH TO SEE THE LAST ONE'S FIRST FLIGHT CRASH IN THE FRONT YARD. HE WENT OUT AND PICKED HIM UP AND I WAS ABLE TO PET HIM BEFORE HE SOARED INTO A TREE ACROSS THE STREET. IT IS A LET DOWN WHEN THEY LEAVE BUT OURS WERE VERY "MESSY" BIRDS. THOSE BEAUTIFUL NESTS THAT PEOPLE SHOW THEY FIND ON THE GROUND NEVER HAD BIRDIES MATURE IN IT.
DO YOU KNOW WHEN YOU SAW THE TITANIC DISPLAY AT BRANSON WAS IT PERMANENT OR IS IT THERE ALL THE TIME....WE HAVEN'T BEEN TO BRANSON FOR OVER 26 YEARS. I HAVE ALL KINDS OF SCRAPBOOKS THAT I HAVE MADE ON THE TITANIC...I TURNED ALL MY RESEARCH INTO A 12 PART DEVOTIONAL FOR WOMEN. IT IS SUCH A SAD STORY...BUT MUCH TO LEARN FROM IT.

This salad is filled with everything I love and I'm with you avocado sounds like a good addition. I have never had anything like this and I am anxious to try it at our next family gathering. We are always trying to come up with new things to try. Thank you for sharing - Hugs - Julie
